2-3 chicken drumstick/thigh quarters
An assortment of vegetables, such as:
potatoes
onions
carrots
parsnips
turnips
green, red, yellow peppers
garlic

Directions:
Directions:
Sprinkle the chicken all over with kosher salt. Let it sit for 30 minutes while you prepare the vegetables. Peel and slice vegetables in even sizes and layer them on the bottom of a 9x13 pan. Drizzle olive oil over the vegetables and season with salt, pepper, rosemary and thyme (or whatever other seasonings are your favorite). Lay the chicken on top of the vegetables, skin side up.
Bake at 400º for 45 minutes or until the chicken is done and the vegetables are soft.
