1 1/4 c. milk (or a little more)
4 T. butter, melted
2 eggs

Dry ingredients:
2 c. white flour (can add some wheat if you want)
4 t. baking powder
4 T. sugar
1 t. salt

Directions:
Directions:
Beat milk, butter and egg lightly in a mixing bowl. Mix the flour, baking powder, sugar and salt and add them all at once to the first mixture, stirring just enough to dampen the flour. Mixture will be thick.

Lightly butter griddle or pan and cook over moderate heat.

Variants:
Add 1 c. blueberries
or
Add 2 tart apples, cut in thin pieces and tossed with 1/2 t. cinnamon
or
Add 1 c. mashed bananas

These pancakes are so delicious you will want to eat them every morning. You probably shouldn't, however, unless you are on a rapid weight-gain diet.
