1 medium zucchini, cut up into bite-size pieces
1 medium summer squash, cut up
1 medium red bell pepper, cut up
1 medium yellow bell pepper, cut up
1 pound fresh asparagus, cut into pieces
1 red onion
3 tbsp extra-virgin olive oil
1 tsp. salt
1/2 tsp. freshly ground black pepper

Directions:
Directions:
Heat oven to 450º. Place the vegetables into a large roasting pan. Toss with the oil, salt and pepper to mix and coat. Spread in a single layer in the pan. Roast for 30 minutes, stirring occasionally, until the vegetables are lightly browned and tender.

This recipe comes from the South Beach Diet website and is really simple to make, but really delicious. You can easily cut this recipe in half, add different vegetables, or add spicier seasonings.
