1 1/2 c. brown rice
2 1/3 c. water
2 tsp. canola or olive oil
1/2 tsp. salt

Adjust rack to middle position and preheat oven to 375º. Spread rice in an 8-inch square glass baking dish (or similar size). Bring water and oil to a boil in a saucepan, then ad salt and pour water over rice. Cover the baking dish tightly with doubled layer of foil. Bake rice for one hour until tender. Remove dish from oven and uncover. Fluff rice with dinner fork, then cover dish with a clean kitchen towel and let rice stand for 5 minutes. Uncover and let rice stand 5 minutes longer. Serve immediately.

Reheats easily in a microwave. This is a good recipe for making rice when you don't have a rice cooker.
