1/2 tbsp. extra-virgin olive oil
1/2 medium onion, roughly chopped
1 garlic clove minced
1/2 pound turkey (or chicken) cut up into 1/2-inch pieces
1/2 tbsp. chili powder
1/2 tsp. ground cumin
8 oz. cannellini beans, rinsed and drained
8 oz. can Mexican diced tomatoes
1/2 c. chicken broth
salt and pepper

Heat oil in a large saucepan on medium high. Add onion and cook until softened, about 5 minutes. Add garlic and cook 1 minute more. Add turkey, chili powder and cumin. Cook, stirring often, until turkey is cooked through, about 5 minutes. Add beans, tomatoes with the juice and broth and bring to a boil. Reduce heat to medium-low and cover. Simmer for at least 15 minutes to allow flavors to blend. Season with salt and pepper to taste.
