1 pkg active dry yeast
1 1/2 c warm water (105-115 degrees)
2/3 c granulated sugar
1 1/2 tsp salt
2/3 c shortening
2 eggs
2 c lukewarm mashed potatoes
7 1/2 c c all-purpose flour

Cinnamon rolls
1/2 recipe refrigerated dough
1 stick butter or margarine, softened
1/2 c granulated sugar
4 tsp cinnamon
1 c raisins (optional)

Sweet Icing

1 c confectioners sugar
1 tbsp milk
1/2 tsp vanilla

Directions:
Dissolve yeast in warm water. Stir in sugar, salt, shortening, eggs, potatoes and 4 cups flour. Beat until smooth. Mix in enough remaining flour to make dough easy to handle. Turn dough onto lightly floured board, knead until smooth and elastic, about 5 min. Please in a greased bowl, turned greased side up. Cover bowl tightly, refrigerate at least 8 hours or until ready to use. (Dough can be kept in refrigerator at 45º or below. Keep covered)
Punch down dough, divide into 2 parts. Use 1/2 dough for cinnamon rolls.
CINNAMON ROLLS: Roll dough into rectangle, 15x9-in; spread with butter. Mix sugar and cinnamon; sprinkle over buttered rectangle, add raisins on top (if desired). Roll up, beginning at wide side. Pinch edges of dough into roll to seal well. Stretch roll to make it even Cut roll into 15 slices. Place slighty apart in a greased baking pan (13x9x2 inches, or in a greased muffin cups. Let rise until double. Place in preheated 375 º oven and bake 25-30 min. While warm, frost with sweet icing.
SWEET ICING:
Mix all ingredients until smooth, frost rolls

This is my brother's (Charles Claxton) recipe. For a man he really can cook, especially baking. I love to go back to Atlanta every year for our get togethers to see what he has cooked. He usually has something new he has tried. Keep it up Charles
