2 c. sugar (can use less)
1 1/3 c. vegetable oil
1 tsp. vanilla
3 large eggs
2 c. flour
2 tsp. cinnamon
2 tsp. baking soda
1 1/2 tsp. kosher salt
3 c. carrots (grated, less than 1 pound)
1 c. raisins (optional)
1 c. walnuts, chopped

FROSTING:
3/4 lb. cream cheese
1/2 lb. unsalted butter
1 tsp. vanilla
1 lb. powdered sugar

Directions:
Preheat oven to 350º. Prepare cupcake pans with paper liners.

In a mixing bowl, beat sugar, oil and vanilla. Add eggs one at a time and continue beating. In another bowl, sift flour, cinnamon, soda and salt. Add half the dry mixture into the wet and mix. Add carrots, walnuts and raisins to remaining flour. Mix by hand to coat, then add all, by hand to the batter. Stir until combined.

Fill cupcake papers 3/4 full. Bake for 10 minutes, then reduce to 350º for 20 minutes. Check with a tooth pic for doneness. Cool on wire rack.

To Make Frosting: Combine all ingredients in mixing bowl and beat until fluffy. Frost when cakes have cooled.
