1 1/4 C. cake flour
1 1/2 C. sugar, split
3 tsp. baking powder
1 tsp. salt
1/3 C. cooking oil
1 C. milk, split
1 1/2 tsp. vanilla
2 eggs, separate yolks from whites
shredded coconut
CHOCOLATE SYRUP:
2 C. boiling water
2 C. sugar
1/2 C. cocoa
pinch salt

Preheat oven 350º. Grease and flour cookie sheet pan.
Beat 2 egg whites and 1/2 C. sugar until fluffy. Set aside. Sift flour, 1 C. sugar, baking powder and 1 tsp. salt. Add oil, 1/2 C. milk and vanilla. Beat 1 minute. Add 1/2 C. milk and 2 egg yolks. Beat 1 minute more. Fold in whites and sugar mixture. Bake 30-35 minutes. MAKE SYRUP: Combine boiling water, sugar, cocoa and salt. Boil 5 minutes and cool. Cut the cake in squares and dip in chocolate syrup and then roll in coconut.
