Souffle

6 medium yams
1/3 c. milk
3/4 c. sugar
2 eggs
1 Tbsp. lemon juice
1/2 c. butter
1 tsp. vanilla

Topping
1 c. butter
2 c. brown sugar
1/2 c. flour
2 c. chopped pecans
miniature marshmallows

Directions:
Directions:
Peel, boil, and mash (mix in mixer) the yams. Add the rest of the souffle ingredients and pour into a casserole dish.

Mix topping ingredients, except the marshmallows, and spread on top of yam mixture.

Bake at 350º for 30-40 minutes.

Top with marshmallows and bake for an additional 5-10 minutes until marhmallows are golden brown.
