10 Green onions chopped fine; white and green parts
1 white, red or yellow onion chopped fine,
1 #10 can salsa style diced tomatoes, drained somewhat (6 lbs. 6 oz)
2 (7 oz) cans diced green chiles
1 bunch cilantro chopped fine; stems and leaves
5 garlic cloves, minced
garlic salt to taste
1/4 c sugar
2 tsp coarse black pepper
2 tsp crushed red chile flakes
OPTIONAL: 1-2 cans of sweet corn kernels
1-2 cans black beans
1-3 avocados diced
squeezed lime/lemon juice to taste 
 
Variations: we like to substitute fruit chunks for the tomatoes: think mango, or peach, or nectarine, berries; and you can also vary the fresh herbs you use, substituting for the cilantro: basil, parsley, mint, dill, sage, fennel, and then use this sweeter salsa for a topping on fish, steak, pork chops, chicken, grilled sausages, or in folded tacos or dip rolled tacos in it. It really dresses up the meal, keeps it from being boring. Bon Apetit! Buen Provecho!

Shelf life on the basic recipe is longer due to using canned goods not fresh tomatoes/ chilies. Just be sure to prevent double-dipping.
