Ingredients: 3/4 cup ketchup 3/4 cup Kentucky Bourbon Barbecue Glaze (see previous recipe or use your favorite barbecue sauce) 1 Tbl yellow mustard 2 Tbl liquid smoke 1 (packed) cup light brown sugar 2 Tbl coconut or spiced rum 1 Tbl finely chopped fresh cilantro 2 tsp chile powder 1 tsp finely minced fresh garlic 1 tsp ground cumin 3 (15 oz) cans cooked "Ranch Style" beans, drained 1/2 cup diced fresh ripe pineapple* 1 1/4 cups diced yellow onion 2 Tbl canola oil 8 oz ground beef 5 oz bacon, cut into 1/4-inch slices 1/2 tsp freshly ground black pepper

Directions:1. In a large mixing bowl, whisk together the ketchup, barbecue glaze, mustard, liquid smoke, sugar, rum, cilantro, chile powder, garlic and cumin until the sugar has dissolved and the ingredients are well mixed. 2. Fold in the beans, pineapple and onions. (Note: Do not break up or smash the beans, as this will result in a "mushy" consistency.) 3. Heat a medium saute pan over medium-high heat; add the oil and heat until the oil is near smoking. Add the ground beef and bacon. Cook, stirring constantly to break up the beef and prevent sticking and burning. Cook until the bacon and beef are golden brown and the fat has rendered. 4. Preheat the oven to 350ºF and position a rack in the center of the oven. 5. Add the browned beef and bacon, along with the rendered fat, to the barbecue bean mixture. Stir gently, taking care not to break up the beans. 6. Spoon the bean mixture into a baking dish. Cook until the beans are hot and bubbly and slightly crusty on top, about 30 minutes. 7. Serve warm or at room temperature. |
