Cake Ingredients
2 c. flour
2 c. sugar
1/2 t. salt
1 t.baking powder
2 t. cinnamon
3 eggs
1 1/2 c. canola oil
2 c. grated carrots
1 t. vanilla
1 c. pineapple well drained
1 c. coconut
1 c. nuts

Frosting Ingredients
8 oz. cream cheese softened
4 c. powdered sugar
8 T. butter softened
1 1/2 t. vanilla

Directions:
Directions:
Mix flour, sugar, salt, baking powder, and cinnamon. Add eggs, oil and continue mixing. Add carrots, vanilla, pineapple, coconut, and nuts and mix and put in greased jelly roll pan. Bake at 350º for 40 min.
Mix frosting ingredients and frost cooled cake.
