1 3/4 c. flour
1 tsp. baking powder
1/4 tsp. salt
2 egg yolks
1 3/4 c. milk
1/2 c. canola oil
2 egg whites

Directions:
Directions:
In a medium mixing bowl, stir together flour, baking powder and salt. Make a well in the center. In another bowl, beat egg yolks slightly. Stir in milk and oil. Add egg yolk mixture all at once to dry mixture. Stir just until moistened. Will be lumpy.

In a small bowl, beat egg whites until stiff peaks form. Gently fold egg whites into the flour/egg mixture. Do not over mix. There should be streaks of egg white. Spoon batter into hot waffle iron.
