3 c. chicken, cooked and chopped
6 T. butter
1/2 c. flour
2 - 13 oz. cans chicken broth
1 bunch green onions, chopped
2 - 4 oz. cans green chilies
2 tsp. ground cumin
1/2 tsp. salt
1 clove garlic, minced
2 c. cheddar cheese, shredded
10 flour tortillas

Garnish: salsa, chopped tomatoes, sour cream

Preheat oven to 350º.

Prepare chicken and set aside. In large saucepan, melt butter and stir in 1/2 c. flour. Cook and stir one minute. Add broth, green onion, green chilies, garlic, cumin and salt. Simmer 15 minutes. Remove from heat. Stir in 2 cups of shredded cheddar cheese until melted. Mix 2 cups of this sauce with 3 cups of cooked chicken. Reserve the remaining sauce in the pan.

Dip 6 inch flour tortillas, one at a time, into the remaining sauce. Spoon 3 T. chicken mixture down the center of each and fold closed. Place in 9 x 13 greased glass pan. Bake for 45 - 80 minutes. Garnish when served.
