Ingredients:	Ingredients: 3 T. butter 2 cloves garlic, chopped 1/2 onion, chopped 10 oz. frozen spinach, chopped and drained 4.5 oz. mushrooms, drained 6 oz. herb/garlic feta 8 oz. cheddar cheese, shredded 2 - 9 inch unbaked deep dish pie crust 4 eggs, beaten 3/4 c. milk salt and pepper to taste

Directions:	Directions: Preheat oven to 375º. Crisp crust in oven 5 - 7 minutes prior to filling. Meanwhile, melt butter in a medium saute pan. Saute garlic and onion in butter until light browned. Saute spinach and mushrooms. Add feta and 1/2 cup cheddar. Season with salt and pepper. Spoon into pie crust. In medium bowl, whisk eggs and milk. Season with salt and pepper. Pour into pie shell over spinach mixture. Bake 15 minutes. Sprinkle top with remaining cheddar, then bake an additional 35 - 40 minutes. Let stand 10 minutes before serving. Can substitute fresh spinach and mushrooms for canned or frozen. Double quantities.
