1 tbsp. butter
1 tbsp. vegetable or canola or olive oil
1 lb. raw shrimp, peeled & devined
1/2 c. each chopped onion, celery & green pepper (you can use red, yellow or all three)
1/2 lb. andouille or smoked sausage,coarsely chopped
1 (10 3/4 oz.) cream of mushroom soup
1 (10 3/4 oz.) cheddar cheese soup
1/2 c. sliced green onions
2 3/4 c. cooked rice
1/4 c. dried bread crumbs
1 tbsp. butter melted
salt, pepper & hot sauce to taste

Preheat oven to 350º F. In a large skillet over medium high heat, melt half the butter with half the olive oil. Saute the shrimp just until light pink. Slightly under-cook them. If the shrimp are already cooked & not raw skip the 1st step. Drain & remove shrimp, set them aside. Add remaining butter & olive oil & reheat the pan to medium high. Saute the onion, celery & green pepper until soft. Add the audouille to the veggie mixture & saute until warmed through. Add the cream of mushroom soup & cheddar cheese soup & heat through. Stir in cooked rice & green onions; remove from heat, add salt pepper & hot sauce to taste, return shrimp to the pan & stir well. Turn out into a casserole dish that has been buttered or lightly coated with non-stick spray. Toss bread crumbs with melted butter and spread on top. Bake at 350º for about 20 to 30 minutes or until bubbly.
