1 Whole Chicken
2 cans of diced tomatoes
1 Whole Bell Pepper (diced)
1 Whole Onion (diced)
9 Green Onions (chopped)
1 bunch of celery hearts (chopped)
1 polish sausage (diced)
1 lb. of Shrimp (deveined without tails)
˝ tsp. red pepper
˝ tsp. gumbo file
1 Bay Leaf
Tony’s Creole Seasoning
Salt
Pepper
1 cup flour
1 cup grease or oil

Directions:
Boil chicken until falling off the bones. Meanwhile make rue by placing oil and flour in a skillet and cook until the color of caramel. Be careful and do not burn it! Remove chicken from broth and take out all the bones. Return chicken meat to about 3 cups broth and add tomatoes, bell pepper, onions and celery. Boil until vegetables are tender. Add spices, shrimp and sausage to the pot. Cook until shrimp is pink and curls. Add rue to the pot and let simmer for about 30 minutes. Serve over rice. You can double this recipe and freeze portions of it for later.
