1 1/2 cups rice
3 cups water
1 onion, chopped
1/2 stick butter
2 tsp chili powder
1 can chili (no beans)
Salt and pepper to taste
Grated cheese, Monterrey Jack or cheddar

Directions:
Directions:
Heat butter in large frying pan; add rice and onion, salt and pepper. Fry until rice changes color or is fluffy. Add water and cook slowly, covered, for 20 minutes. Mix chili into rice. Place half in casserole dish and top with half of the cheese. Place other half of mixture on top, and then top that layer with remaining cheese. Bake at 350º until bubbly.
