25 lbs pork
25 lbs deer or beef
1 lb salt
7 oz black pepper
3 tbsp red pepper
1 tbsp nutmeg
1 tbsp ground coriander
1 oz MSG or saltpeter
2 tbsp mustard seeds
2 pods garlic, ground in blender with hot water

Directions:
Directions:
Grind meat. Add all ingredients and mix. Stuff into casings. Smoke with oak or mesquite bark. Makes good dried sausage.
