1 large beefsteak tomato, chopped in large chunks
1 large cucumber, halved, seeded and chopped in large chunks
1 T. capers
8-10 big leaves fresh basil, coarsely chopped

Directions:
Directions:
Combine all ingredients in a bowl and sprinkle with 1 t. kosher salt and 1/2 t. freshly ground pepper.

Slice 1 red onion in thick slices and cut a red and a yellow pepper in half. Brush with olive oil and grill on both sides until soft. Slice into large chunks and add to bowl with tomatoes and cucumbers.

Take 10-12 baguette slices and drizzle with olive oil (I also sprinkled with some garlic salt). Grill for about a minute on both sides until toasty. Add to bowl with vegies.

Toss everything with Champagne Vinaigrette:
2-3 minced cloves of garlic
1 t. dijon
1/2 t. kosher salt
1/4 t. pepper
2 T. champagne vinegar
4 T. olive oil
