1 loaf crusty bread (Italian, garlic, ciabatta, etc.), slice in half length-wise
Pesto
Veggies (red/yellow/green peppers, eggplant, zucchini, red onion, etc.), large/flat slices
fresh mozzarella

Directions:
Directions:
Toss sliced veggies generously with salt, pepper, olive oil, & grill. Meanwhile, brush both sides of bread with pesto. Place sliced mozzarella on one side of bread and bake in oven until cheese melts and bread warms. Add veggies to bread, make sandwich, slice and serve.
