2 pounds fresh spinach leaves
1/3 cup grated Parmesan Cheese
2 tbsp butter
1 tbsp olive oil
1 clove garlic, crushed
Salt and freshly ground pepper

For Sauce:
1/3 cup grated Parmesan cheese
1 tbsp butter
1 tbsp flour
1 cup milk
1/2 lemon
Nutmeg
Salt and pepper pepper

Directions:
Directions:
Trim and wash the spinach leaves. Place in a pot and let wilt at high temperature. Remove the spinach and drain it thoroughly. Heat the oil in a frying pan. Add spinach and the crushed garlic. Season with salt and pepper while you melt 1 tbsp of butter into the spinach. Remove from the heat. Preheat oven to 400º.

For the sauce, melt 1 tbsp of butter in a saucepan, stir in the flour, and lightly brown . Pour in the milk, and while stirring constantly, simmer until creamy. Remove from heat, stir in the Parmesan cheese, and season with a pinch of grated nutmeg, salt, pepper, and 1 to 2 tbsp of lemon juice. Place the spinach into a baking dish, pour the sauce over the spinach, and to with another 1/3 cup of grated Parmesan cheese. Bake in the oven approximately 5 minutes.
