3-4 pound whole chicken
2 whole lemons
4-6 garlic cloves, unpeeled
Olive oil
Salt and freshly ground black pepper

Preheat oven to 375º.

Thoroughly pat dry the chicken. Place is as roasting pan. Cut the lemons in half, squeeze the juice on the chicken, inside and out. Insert the lemon halves and garlic cloves inside the chicken cavity. Slather olive oil over the chicken skin and inside the cavity. Salt and pepper the chicken liberally inside and out.

Roast in the oven for 75-90 minutes, until the breast meat tests at 160º with a meat thermometer.

Remove the chicken from the oven, and also remove the garlic and lemons from the cavity. Let the chicken sit for about 20-30 minutes before serving.

The juices that are generated from the roasting of the chicken are delicious. Mom likes to skim the fat from the drippings, reduce by half over low heat, then make a simple sauce for pasta. SUPERB!!
