Catfish
1 scoop white cornmeal
1/2 scoop yellow cornmeal
1/4 scoop flour
salt and pepper
oil

Directions:
Directions:
Cut fish in 2 inch pieces or on 45 degree angle.
Season heavily with salt and pepper. The only way to get rid of the fishy taste is with lots of salt.
Heat oil to 375-400. (To test if oil is hot enough, drop kitchen match into grease, if it lights, the oil is hot enough. If you lose your brows, the oil is too hot.) Fry in small batches until fish floats, then fry a few minutes longer. DO NOT COVER the fish when it is done, it will get soggy.
