1 lb. cooked macaroni (#7) I use the medium shell pasta
2 whole eggs, well beaten
1/4 cup finely chopped parsley
1 stick of butter
1 cup chopped onions
1/3 cup celery 1 cup light cream
2 cups medium-sharp cheddar cheese
1/2 cup Swiss cheese
3/4 cup Velveeta chesse
salt and pepper to taste

Preheat oven to 350 degrees
Place cooked pasta in a buttered casserole dish and thoroughly mix in the 2 beaten eggs and parsley.
In a saucepan melt the butter over medium heat and saute the onions and celery until they wilt. At this point, stir in the cream until blended well. A little at a time, start adding the cheeses to the sauce- first, half of the cheddar, then Swiss and finally Velveeta.
Stir constantly as you add cheese so that it won't stick to pan and burn. Heat remains on medium.
Add salt and white pepper to taste and pour evenly over macaroni. Mix very well! Sprinkle remaining cheddar cheese on top bake in oven for 35- 45 minutes or until cheese on top starts to brown.
Before serving, put under broiler for a few minutes to toast the cheddar on top.
