1 can (9 oz.) bean dip
2 T. Plus 1/4 cup sour cream
1 T. Plus 1/2 tsp. southwestern seasoning mix, divided
2 cups cooked chicken, chopped
1 cup of red bell pepper
1/2 cup green onions with tops, thinly sliced
3/4 cup pitted ripe olives, sliced , divided
1/4 cup fresh cilantro , snipped, divided
5 (10 inch) flour tortillas
8 oz. mild cheddar cheese, shredded
2 medium plum tomatoes, seeded and chopped

Preheat oven to 375. In 1 quart batter bowl combine bean dip and 2 tablespoons of sour cream and 1 tablespoon of the seasoning mix; mix well.

Chop chicken and bell pepper and place in a batter bowl. Slice green onions and 1/2 cup of olives and 2 tablespoons of cilantro and place in batter bowl and mix gently.

Top tortilla with 2 scoops of bean mixture and transfer to a round baking stone. Top evenly with chicken mixture. Cover chicken mixture with cheese. Repeat 3 more times on top of the first tortilla creating a "stack". Top with remaining tortilla. Spray the top with veg. Oil. Bake for 25 minutes until golden brown. Mix the remaining sour cream, seasoning mix and spread over the warm tortilla stack. Sprinkle with tomatoes, olives and cilantro!!!!
