1 pound chicken gizzards
1/3 cup vegetable oil
1/3 cup
flour
1 lb ground pork
1 cup chopped onions
1/2 cup chopped bell peppers
1/2 cup chopped ce;ery
4 cups cooked rice - Uncle Ben's
2 tsp salt
1/2 tsp cayennne
1/2 cup chopped green onions
1/4 cup chopped parsely

Directions:
Directions:
1.Boil the gizzards and one onion quartered in water to cover in a saucepan over medium heat for about 1 hour, or until tender. Drain, reserving the broth.

2. Combine the oil and flour in a large saucepan over medium heat, make a dark roux stirring constantly.

3 Add pork to roux and cook for 5 minutes stirring constantly.

4 Add onions, bell peppers and celery and cook for 5 minutes stirring occasionally.

5 If you want gizzards in the rice put gizzards in food processor or chop up and add to mixture.

7. Pour 1 cup gizzard stock in and mix well.

8. Add rice and stir.

9. Add salt, cayenne green onions and parsley.

Jeannie doesn't like gizzards so I don't add them! Barney used to love them though! Bruno hasn't been lucky enough to get any yet!

If you cook this night before save another cup of gizzard stock to pour on rice and stir before putting in oven
