6 pounds sweet potatoes
1/2 C unsalted butter, cut into pieces, at room temperature
2 Tbsp brown sugar
2 tsp grated lemon peel
2 tsp grated orange peel
2 eggs, beaten to blend
1-3/4 C coarsely chopped pecans

Directions:
Directions:
Preheat oven to 350º. Place sweet potatoes on baking sheet. Pierce with fork. Roast until tender, about 1 hour 15 minutes. Cool slightly. Peel and transfer to bowl and mash. Stir in butter, sugar, lemon peel and orange peel. (Can be prepared 1 day ahead. cover and chill)

Preheat oven to 350º. Mix eggs into sweet potato mixture. Transfer to 3- quart baking dish. Sprinkle pecans over top. Bake until heated through, about 1 hour.
