1 lb. lean ground turkey
1/2 c. chopped onion
1 can (10.5 oz.) condensed chicken broth, divided
1 c. chopped celery
1 can (8 oz. sliced) water chestnuts, drained
1 jar (4.5 oz.) sliced mushrooms, drained
1/4 tsp. ground ginger
1 can (14 oz.) bean sprouts, drained
2 T. corn starch
2 T. reduced sodium soy sauce

Directions:
In nonstick skillet or wok, cook turkey and onion until turkey is no longer pink; drain. Add 1 c. of broth and next 4 ingredients. Bring to a boil, reduce heat; cover and simmer 10 to 15 min. until celery is tender. Add bean sprouts. Combine the cornstarch, soy sauce and remaining broth stirring into turkey mixture. Bring to a boil; cook and stir 2 min. until thickened. Serve over rice or chowmein noodles. Yield: 5 servings.
