4 large Yams
1 pound carrots
2 cups water
1 T sugar
12 T butter
salt and pepper
1/2 cup creme fraiche (1 cup heavy cream and 1 cup sour cream whisked together, cover loosely and let sit out overnight, then cover and refrigerate 4 hours)

Directions:
Bake yams in 375º oven 45 minutes. Peel and trim carrots and cut into 1" length. Put in saucepan with 2 T butter, S&P, sugar and water. Cook uncovered til water has evaporated and carrots sizzle in butter. Carrots should be tender.

Scrape out sweet potatoes and combine with carrots in the food processor. Add remaining butter, and creme fraiche and process til very smooth. Add nutmeg and season with salt and pepper.
