4 potatoes cubed
10 oz frozen corn
1 can green beans
2 cans tomato juice
1 medium onion finely chopped
1 to 1 1/2 cans beef broth
1 cup chopped carrots
2-3 teaspoon salt
2 teaspoon pepper
garlic salt to taste
2 stalks celery (finely chopped)
1 can water as needed

1. Bring to a boil, reduce to simmer and cook for several hours until potatoes are very tender.

2. Serve with fresh hot cornbread (not the sweet kind).

We ate this all the time growing up. The smell of this cooking always takes me back to my childhood. I remember though, being such a picky eater. All I wanted to eat was the broth soaked in cornbread, the potatoes and the corn. I'd spend fifteen minutes picking out all the other stuff. I begged my mom to make it without all that "yucky stuff." She appeased me one day to make a point and made it without the things I disliked. It didn't taste very good and I think I stopped complaining. I also remember sometimes my mom would pull out my great grandma Becky's dishes for us to use with the soup.
