Ingredients: 4 potatoes cubed 10 oz frozen corn 1 can green beans 2 cans tomato juice 1 medium onion finely chopped 1 to 1 1/2 cans beef broth 1 cup chopped carrots 2-3 teaspoon salt 2 teaspoon pepper garlic salt to taste 2 stalks celery (finely chopped) 1 can water as needed

Directions:1. Bring to a boil, reduce to simmer and cook for several hours until potatoes are very tender.
2. Serve with fresh hot cornbread (not the sweet kind). |

Notes: We ate this all the time growing up. The smell of this cooking always takes me back to my childhood. I remember though, being such a picky eater. All I wanted to eat was the broth soaked in cornbread, the potatoes and the corn. I'd spend fifteen minutes picking out all the other stuff. I begged my mom to make it without all that "yucky stuff." She appeased me one day to make a point and made it without the things I disliked. It didn't taste very good and I think I stopped complaining. I also remember sometimes my mom would pull out my great grandma Becky's dishes for us to use with the soup.
