2 1/2 c. flour (white or 1/2 white, 1/2 wheat)
1/4 c. powdered milk
1/2 c. wheat germ
2 tsp. baking soda
1/2 tsp. baking powder
2 c. sugar (1 white, 1 brown)
3 tsp. cinnamon
1/2 tsp. nutmeg
1 c. oil
3 eggs. beaten
3 tsp. vanilla
1 c. chopped nuts
2 c. grated zucchini, unpeeled

Directions:

Combine above ingredients and bake in well greased loaf pan at 350º F for 1 hour. Recipes makes two loaves.

This was my recipe when my kids were little and I tried to pack lots of "good stuff" into sweets for them. Grandma really liked it and asked for the recipe.-Donna
