6-8 medium dark orange sweet potatoes (Yams), peeled, cut into 1-1/2 in pieces
1/2 C. heavy whipping cream
4 Tbsp. butter, melted; divided
1/4 C. maple syrup
1/2 tsp. salt
4 Nature Valley maple-brown sugar crunchy granola bars, crushed

Directions:
Directions:
Place potatoes in water and bring to a boil on medium-high heat. Reduce heat to medium-low. Cook uncovered 15-20 minutes or until tender. Drain and return potatoes to saucepan.
Preheat oven to 350º. Spray a 8-inch square pan with cooking spray.
Add whipping cream, 2 Tbsp. butter, maple syrup and salt to potatoes. Mash with potato masher or electric mixer until smooth.
Spoon into prepared baking dish.
In a blender, crush granola bars and mix with 2 Tbsp. butter. Sprinkle over potatoes. Bake for 1 hour.

I bake the sweet potatoes instead of boiling them. Then I scoop the potatoes out of the peels and follow the directions for mashing them.
