6 potatoes, sliced
1 pound ground beef
1 pound ground lamb
2 onions, chopped
salt and pepper to taste
1/2 cup uncooked long grain rice
1 (28 ounce) can whole tomatoes, cut up with juice
1 (10 3/4 ounce) can condensed tomato soup
1 or 2 hard-boiled eggs, sliced
1 cup diced celery
1 large can baked beans

Directions:
Directions:
Preheat oven to 350º.

Layer potatoes in 2 1/2 -quart casserole. In skillet, brown ground beef and lamb with onions; layer over potatoes. Season with salt and pepper to taste. Layer rice, tomatoes, tomato soup, eggs and diced celery. Spread beans over top of hotdish.

Bake 2 hours.

This is a terrific hotdish that can be made with leftovers from the fridge. Kids love to help assemble the layers.
