Ingredients: CRUST: 1 1/4 C. Flour; 1/4 t. Salt; 1/3C. cold unsalted Butter,diced 1/2 C. grated sharp Cheddar Cheese 5 T. ice water-more if needed
FILLING' 5 C. peeled and thickly sliced tart apples, 1/2 C. chopped roasted green Hatch chilies (may use canned) 2 T. fresh Lemon Juice 1/2 C. Sugar; 1/4 C. light Brown Sugar 1/2 t. Cinnamon; 1/4 t. Allspice 1/4 t. Nutmeg preferrably fresh grated 1/4 t. Salt; 1/4 C. Cornstarch
FOR TOPPING; 1/2 C. Flour 1/2 c. finely chopped Walnuts 1/4 C. light Brown Sugar 4 T. unsalted Butter, melted

Directions: |
Directions:Make crust in food processor or mixer fitted with a paddle attachment. Combine four and salt,Add butter one piece a t a time while mixing. Transfer to large bowl and toss well with cheese. Add ice Water one tablespoon at a time. Mix lightly with fingers just till blended. Form into ball, wrap in plastic then into disk. Refrigerate 1 hour or up to 3 days. Roll out for pie as usual. Make the FILLING: Toss Apples, green Chillies and lemon juice together. Mix dry ingredients together then add to fruits. MIX TOPPING: Mix flour, walnuts and brown sugar. Add melted butter and toss til crumbly. Top pie B AKE 400º 10 minutes then reduce to 375º and bake 30-40 minutes or until filling bubles at edge and is brown. Serve with vanilla ice cream. |
