1 cup flour
3 eggs
2 cups milk
salt to taste (important)

Pour flour into mixing bowl; add eggs and milk. Mix on medium/high with hand mixer. Add teaspoon of salt, continue mixing. When batter is smooth, taste for salt content (should be able to taste a little salt; if not keep adding until you do)...I'm told this is important. Let batter stand a couple of hours (no need to refrigerate) before you make crepes. You don't need a crepe pan, but it's not a bad idea... Can stuff these with fruit, ham/cheese, or eat them plain w/butter and syrup...my favorite! My parents-in-law eat them with syrup and lots of rum...
