2 cups light colored beer
1/2 cup minced onion
4 medium garlic cloves, minced
3 sprigs fresh thyme
1 bay leaf
4 pounds mussels, washed
4 tablespoons unsalted butter
1/2 cup chopped Italian flat-leaf parsley
salt and pepper to taste

Directions:
Directions:
Bring beer, onion, garlic, thyme and bay leaf to a simmer. Simmer for about 3 minutes to blend flavors. Increase the heat to high before adding the mussels. Cover and cook, stirring or shaking the pot vigorously a couple of times until the mussels open, about 4-8 minutes. Using a slotted spoon, transfer the mussels to serving bowls. Discard any unopened mussels. Swirl butter into the steaming liquid to make a light emulsified sauce. Stir in the parsley. Pour the broth over the mussels and serve immediately with crusty bread.
Can also be served over linguine or thin spaghetti.
