5 Quarts of Water
1 Whole Chicken (Washed/Rinsed)
3 Tbsp. Salt
1/2 Tbsp. Pepper
3 Tbsp. Granulated Onion
3 Tbsp. Granulated Garlic
2 Tbsp. Thyme
1 Tbsp. Rosemary
4 Tbsp. Cumin
1 Tbsp. Oregano
4 Celery Stalks (Diced or Sliced Smallish)
3 Carrots (Diced)
1/2 Large Onion (Diced)
1/2 Medium Cabbage (Chopped to bite-sized pieces)
1 Can Full Fat Coconut Milk

Optional:
Chives (For Garnish)
Coconut Cream (For Garnish)

Directions:
Directions:
Fill 8+ quart pot with 5 quarts of water. Add all seasonings to water. Wash chicken and add to pot, boil covered with lid for 45 minutes or until legs pull off easily.

While chicken is cooking wash, chop, slice, and dice all veggies. When chicken is done remove from water to cool for 30 minutes. Add all veggies to the pot, cover with lid and boil for 30 minutes or until carrots are tender. When veggies are done remove pot from heat.

Remove chicken meat from the bones in bite-sized pieces leaving behind all  skin, cartilage and other undesirable parts. Add meat to pot, mix in coconut milk.

Taste - if it's not AWESOME add a little extra seasoning to taste. Top with garnishes and enjoy!

This is gonna make a ton of soup so make sure you have some peeps to share with...I've made this soup for years, but never bothered to try and put it into recipe form, I hate to measure anything. This one is worth sharing so I went for it and after a few tries I think I got it, so.... here you go....
