1/2 lb ground beef
3/4 cup chopped onion
3/4 cup shredded carrots
3/4 cup diced celery
1 tsp. dried basil
1 tsp. dried parsley flakes
4 T. butter (divided)
3 cups chicken broth
4 cups diced peeled potatoes
1/4 cup flour
2 cups American or Cheddar cheese
1 1/2 cups milk
3/4 tsp. salt
1/4 tsp. pepper
3/4 cup sour cream

Directions:
Directions:
In large saucepan, brown beef. Drain. Add 1 T. butter, onion, carrots, celery, basil and parsley. Cook until tender. (about 10 minutes) Add broth, potatoes, and beef. Cover and simmer 10-15 minutes. Meanwhile melt remaining 3 T. butter. Add to soup and bring to boil. Reduce heat. Add cheese, milk, salt and pepper. Remove from heat and add sour cream before serving.
