bacon
Colby jack cheese
provolone cheese
butter

Directions:
Directions:
1. Clean potatoes.
2. Cook potatoes in microwave until almost done (10 small potatoes about 10 min.)
3. Place in refrigerator until cold.
4. Cut potatoes in half.
5. Scoop out centers (save for hash browns.)
6. Put 1/2 tsp butter in each potato half.
7. Bake at 400 degrees until butter has melted (couple minutes.)
8. Turn potatoes over and spray bottoms with cooking spray and return to oven. Bake at 400 degrees until crispy (about 5 minutes.)
9. Fill potatoes with bacon crumbs, shredded Colby jack cheese and a little bit of provolone cheese.
10. Return to oven until cheese has melted.
11. Garnish with sour cream and chives, if desired.
