3 c thinly sliced carrots
7 c sliced zucchini
1/4 c butter or margarine cut into small pieces
1 tsp salt
1/2 tsp ground black pepper
6 oz Gruyere Cheese, grated
1/2 c chicken broth

Directions:
Directions:
In a large saucepan, cover carrots with water. Bring water to a boil and cook carrots 3-5 minutes or just until tender, drain.
Preheat oven to 375. Place zucchini in a greased 9 x 13 glass baking dish. Place carrots over zucchini. Place pieces of butter evenly over carrots. Sprinkle salt, pepper and cheese evenly over vegetables. Pour chicken broth evenly over top. Cover and bake 20 minutes. Bake uncovered 25-30 minutes longer or until cheese browns and vegetables are tender. Serve warm.
