12 med-lrg Jalapeņos peppers (with stems)
1 Cup Flour
6 Eggs (beaten)
1 Cup Corn Meal

Filling:
16 oz. Cream Cheese (softened)
8 oz. Jack cheese (shredded)
8 oz. Cheddar (shredded)
7 oz. Can Crab meat
Mix all cheeses together and fold in crab meat.

Directions:
Directions:
Slice peppers from top to bottom leaving stems intact. Remove seeds and membranes. Fill each pepper with filling mix and recluse. Wipe any excess filling from outside of pepper. Pinch to seal shut. Holding the stem, dip in egg, flour, egg and then corn meal. Deep fry at 350* until golden.
Serve with Ranch Dressing, Salsa or sour cream.
