3 c. chopped onion (1 large)
1 ½ c. chopped green pepper
1/4 c. chopped celery
12 cloves garlic, minced
2 T. cooking oil
6 c. chopped, peeled tomatoes (6 large)
3 - 12 oz. cans tomato paste
2 T. snipped fresh parsley
3 t. dried basil
3 t. dried oregano
1 ½ t. dried marjoram
3 t. sugar
1 ½ t. salt
¾ t. black pepper

In a Dutch oven cook onion, green pepper, celery and garlic in hot oil until veggies are tender. (Our biggest soup kettle) Add tomatoes, tomato paste, parsley, dried herbs, sugar, salt and black pepper. Bring to boil, reduce heat and simmer covered for 30 minutes. Uncover, simmer for 10 to 15 min more or to desired consistency, stirring occasionally. I also discard several T. of excess juice.

Cooked 20 minutes in canner. Add to jars and process for 25 minutes in canner.

Note: After the pot had simmered for 15 minutes I took off 4 cups of juice and used 1 cup to stir in the paste and slowly added the paste. The pot bubbled, simmered 10 more minutes and I pulled off 2 cups more of liquid and discarded. This makes great thick sauce.
