1/4 c. margarine
1 T. minced onion
1/3 c. flour
1 tsp salt
1/8 tsp pepper
4-6 tsp curry powder (I usually use part mild curry powder and part hot curry powder)
1/2 c. chicken broth
1 1/2 c. milk
2 1/2 c. diced chicken

Directions:
Directions:
Melt margarine. Saute the onions, then add flour and seasonings. Add the chicken broth and stir until thick. Add milk, cook and stir until smooth and thickened slightly. Add chicken and heat thoroughly. Serve over rice.

For gluten free, use potato flour, cornstarch or tapioca flour instead of wheat flour.
