Gluten Free Nut Crust:
1 c. almond meal
1/4 c. powdered sugar
2 T chilled butter
1 1/2 t cream or Half & Half

Cheesecake:
3 lb. cream cheese or neufchatel cheese
2 c. sugar
6 eggs
2 T vanilla

Directions:
Directions:
Crust: Blend all ingredients together until the dough clumps together into a ball.
Spread across bottom and part way up walls of 10 in. springform plan, using fingers. Bake at 400º for 8 minutes.
Cheesecake: Beat cream cheese and sugar until combined and fluffy. Add vanilla. Add eggs, one at a time and beat between additions. When all is smoothly combined, pour into crust-lined 10 in. springform pan. Bake at 300º for 60 minutes, then turm oven off. Do not open oven door. Allow cheesecake to finish baking and to cool at least part way in the closed oven. Chill when cool.
