1 large onion
2 cloves garlic
1 lb of ground beef or ground turkey
1 tablespoon basil
salt & pepper
1 big can of tomatoes
2 6 oz. cans tomato paste
1 package of lasagna noodles
3 cups of ricotta or cottage cheese
1/2 cup grated Parmesan (the dry kind in the can)
2 tablespoons dried parsley
2 beaten eggs
1 lb of mozzarella cheese sliced very thin

Directions:
Directions:
Brown the ground beef with the onion and garlic then add basil, salt & pepper, tomatoes, and tomato paste. Simmer uncovered for about 30 minutes, stirring occasionally.

Cook the pasta in salted water until tender.

Stir together ricotta/cottage, Parmesan, egg, parsley, salt & pepper.

Cover the bottom of a greased 9 x13 baking dish with1/2 of the pasta. Spread 1/2 of the cheese mixture over the noodles and cover with 1/2 of the sauce and 1/2 of the mozzarella slices. Repeat layers and bake at 375º for 30 minutes. Let stand for 10 minutes before cutting into squares.

You can use all cottage cheese, all ricotta cheese or a combination of both.

Jaci - you can leave out the meat and had sliced zucchini to the sauce and a layer of spinach.
