2 eggs
1c. canola oil
2 c. sugar
1 tsp. vanilla
1 tsp. baking soda
1 T. water
2 c. flour
2 tsp. cinnamon
3/4 tsp. salt
pinch of ground nutmeg
4 c. peeled,cubed apples (Empire apples work well)
1c. chopped walnuts

Directions:
Directions:
Beat together thoroughly the eggs and oil.
Add sugar, vanilla, baking soda and water and beat until light and fluffy. Add flour, cinnamon,salt and nutmeg. Beat until just smooth. Dough will be stiff.
Fold in apples and walnuts.

Spread batter into greased 9" X 13" pan. Bake at 350 degrees for 55-60 minutes.Store at room temperature for 24 hours. Sprinkle with confectioners' sugar when serving. Good with vanilla ice cream or whipped cream!
