1 T. flour
1 box white cake mix (18 1/4 oz,)
3 oz. mixed fruit-flavored Jello
3/4 c. canola oil
1 c. cut-up watermelon pieces
4 eggs




Icing:
1 stick margarine, softened
16-oz. box confectioners' sugar
1/2 to 1c. cut-up watermelon






Directions:
Directions:
Preheat oven to 325 degrees.
In a large bowl, sprinkle the flour over the cake mix.Add the Jello, oil and 1c. watermelon pieces.
Mix thoroughly with electric mixer, adding the eggs one at a time . Divide batter into 2 greased and floured 9-inch cake pans. Bake for about 30 minutes. Cool 10 minutes. Turn out layers onto plates.Cool before icing.

Icing:
Add the sugar to softened margarine. Mix well.
Blend in watermelon gradually until spreading consistency is reached. Might want to add a drop or two of red food coloring. Spread icing over one layer of cake. Top with second layer. Spread the rest of the icing generously over cake.
