3 c. sifted flour
2 c. sugar
2 tsp. baking soda
1 tsp. salt
1/2 c. Nestle Quik
2 c. water
1 c. salad oil
2 tbsp. vinegar
2 tsp. vanilla

Filling:
1 pkg. (8-oz) cream cheese, softened
1 egg
1/2 c. sugar
1 c. milk chocolate chips
pinch of salt

Directions:
Filling: Beat cream cheese, egg, sugar, and salt until smooth. Stir in chocolate chips and set aside. In another bowl, combine dry ingredients. Stir in liquid ingredients until mixture is smooth. Fill paper lined cupcake tins 1/2 full, about 1/4 cup of cupcake mixture. Put one heaping teaspoon of filling mixture into the center of each cupcake. If any filling is left over, divide evenly among the cupcakes. Bake at 350º for 30 minutes. Frost with chocolate or cream cheese frosting, if desired.
