2 lbs. bulk pork sausage
2 cups cheddar cheese, shredded
1 can cream of chicken soup
8 oz. sour cream
8 oz. French onion dip
1 cup chopped onion
1/4 cup chopped green pepper
1/4 cup chopped red pepper
1/8 tsp. pepper
30 oz. package frozen shredded hash browns (thawed)

Pre-heat oven to 350º. Spray large baking dish (3 qt.) with non-stick cooking spray. Cook sausage and drain. In a large bowl, combine 1 3/4 cups cheese, soup, sour cream, dip, onion, and peppers. When it is all mixed together, fold in the hash browns. Spread half of the mixture into the baking dish. Top with sausage, and then remaining potato mixture. Sprinkle with remaining cheese. Cover and bake for 45 minutes. Uncover and bake additional 10 minutes. Note: Great to make the night before and then just pop in the oven in the morning for a hot and hearty breakfast.
